Vanilla Almond Zucchini Muffins


  • 2 cups grated zucchini

  • 1/4 cup melted and cooled Butter (grass fed if possible)

  • 1/2 cup Maple Syrup or Honey

  • 1/4 cup Milk (or water)

  • 2 tsp Vanilla Extract

  • 1 tsp Baking Soda

  • 1 tsp Baking Power

  • 2 cups Flour (AP flour, whole wheat, oat, almond, cassava)

  • 2 Eggs

  • 1 tsp Cinnamon

  • 1/2 cup [Vanilla Almond] Sola Sweet Granola (+ extra for topping!)

  • Manuka Honey for topping (optional)


  1. Preheat to 350 Bake and grease the muffin tin or use nonstick

  2. Mix together the syrup, butter, eggs and milk

  3. Add in and mix the baking soda, baking powder, and vanilla

  4. While the mixer is going, slowly add in the flour a little at a time until fully incorporated

  5. Add cinnamon and salt, stir

  6. Slowly fold in grated zucchini and granola

  7. Fill the greased muffins tins a little higher than 2/3 full

  8. Top with more Sola Sweet Granola

  9. Bake for 20(ish) minutes or until a fork can come out clean
