Pasta la Passion

Pasta la Passion

This is a comfort food but has tons nutrients/veggies but also will fill you up. This recipe is near and dear to my heart as it is a recipe my mom made for me weekly growing up. Feel free to add any any other veggies you would like; something I add in sautéed spinach and onion!

Now, I use chickpea pasta as it is filled with protein, has less carbs and is high in fiber but any pasta will do. Bow tie is always a great shape for this dish! I also use grass fed butter instead of the usual vegetable oil based butter because of the flavor and health benefits of ghee but you can sub whatever you have in your kitchen for the sauce!

  • 1 box Pasta of any kind

  • 2 cloves minced Garlic

  • 1 pound of no hormone/organic Chicken Breast (usually 2 breasts)

  • 2 cups Broccoli Florets

  • 3/4 cup Sun Dried Tomatoes (the oil packed jar)

  • 1 tsp basil (dried or fresh)

  • 1 cup Chicken Bone Broth or stock

  • 2 tbsp Grass Fed Butter

  • Parm Cheese

  • Salt and Pepper as desired

  • Red Pepper Flakes optional

  1. Cook pasta according to directions (1 minute less than normal) and set aside

  2. Saute oil and garlic in pan for a minute

  3. Cut chicken into strips or cubes, lightly salt and pepper and add to pan (stir and cook until almost done and remove from pan, set aside)

  4. Add broccoli florets (up to you on their size). Add more oil if needed and cook until they are soft/crispy

  5. Add tomatoes, seasonings and broth, stir

  6. Add butter

  7. Add chicken and pasta and stir everything until full incorporated together

  8. Cover and let simmer for a few minutes to create and thicken a sauce

  9. Uncover, shred parm cheese, stir and serve!
