Healthy "Mac & Cheese"
1/2 bag pasta of choice
1 tbsp oil (I used avocado oil)
1 medium onion
2 tsp minced garlic (or 4 minced cloves)
2 tbsp butter
1/2 cup raw unsalted cashews
1/2-3/4 cup Milk (I used unsweetened extra creamy oat milk)
3 tbsp Nutritional Yeast
Cook pasta according to directions and set aside
Heat up a sauté pan, add oil to coat bottom of pan
Add in chopped onion and cashews
As onion starts to get translucent, add in minced garlic and and stir
As garlic becomes fragrant, add in cold butter, let melt and stir together
Transfer mixture to food processor to high speed blender, add in (1/2 cup) milk and nutritional yeast and blend
Add more milk if needed
Toss pasta back in pan and pour “cheese” sauce over pasta. Stir gently to coat completely.
Add salt and pepper, toss and serve!
