Chocolate Peanut Butter Rice Crispy Treats

Ingredients:

  • 4 cups Rice Crisps (I used the cacao from One Degree Organics)

  • 1 bag Marshmallows (I used Dandies)

  • 1/4 cup Peanut Butter (no oil or sugar added)

  • 2 tbsp grass fed butter or ghee

Directions:

  1. Boil water on stove and place another pot overtop to create a double boiler

  2. Place butter and marshmallows into top pot and add 2 tbsp of water

  3. Continue to stir every minute for 10 minutes or so, breaking up the marshmallows until completely melted

  4. OR — you can just place butter and marsh in a bowl and melt in the microwave

  5. Place crisps in a large bowl, top with peanut butter and stir

  6. Once everything is melted with minimal lumps, add to crisp mixture and stir until everything is coated and sticking together

  7. Place in a 8x8 pan (a bread pan for thicker treats!) and press down evenly

  8. Let sit in the fridge for an hour before removing and cutting into squares
