Ingredients
  1. 1 box pasta (I use Banza)
  2. 2 1/2 cloves (or 1 tsp) minced garlic
  3. 1 pound of thin sliced boneless chicken beast (cut into pieces)
  4. 2 1/2 cups broccoli florets
  5. 1 T basil (1 1/2 T dried basil)
  6. 1/4 cup marsala wine (i wouldn't sub) but- can use 1/4 cup white wine or 1/4 white grape juice, 1 T vanilla extract or 2 T sherry vinegar)
  7. 1 cup chicken broth
  8. 1 T ghee or butter (I use fourth and heart garlic ghee)
  9. 1/2 cup sliced sun dried tomatoes in oil
  10. pinch crushed red pepper
  11. salt and pepper to taste
  12. oil for pan
  13. shredded parmesan for topping
Instructions
  1. Boil 2 pots of salted water (1 for broccoli, 1 for pasta)
  2. Sautee garlic and chicken in oiling pan until almost cooked
  3. Add in sun dried tomatoes, all seasonings, wine and chicken broth & stir well. Let simmer for a few minutes.
  4. Add in butter and let simmer for another 5 minutes
  5. Add pasta to water and cook for time on directions
  6. Add broccoli to boiling water (have bowl of cold water ready) and cook until tender
  7. Blanch broccoli (scoop into cold water to stop the cooking)
  8. With slotted spoon, add broccoli to mixture
  9. Add pasta to mixture once done and stir until all pasta is coated heavily (save 1/2-1 cup of pasta water)
  10. Add pasta water to mixture and stir in
  11. Add parm and serve

I use Banza Pasta, as it is filled with protein, has less carbs and is high in fiber but any pasta will do. Bow tie is always a great shape for this dish!

I also use Fourth & Heart ghee instead of butter because of the flavor and health benefits of ghee but you can sub whatever you have in your kitchen for the sauce!
