Greek Yogurt Chicken Salad

Literally, chicken salad is one of my favorite foods but I am super particular about it.

Ingredients
  1. 1 Rotisserie Chicken
  2. 1/4 cup Greek Yogurt (i used SO Delicious for dairy free or Siggis for dairy)
  3. 1/4-1/2 cup Avocado Mayo (I used Sir Kensington's)
  4. 1/2 Juice of Lemon
  5. 2-3 tsp Dijon Mustard (I used Sir Kensington's)
  6. 1/2 tsp garlic powder
  7. 1/2 tsp sea salt/Himalayan pink salt (or to taste)
  8. 1/4 tsp black pepper
  9. 1/4 cup toasted sliced Almonds
  10. 1/2 cup Sliced Grapes
  11. 1/3 cup Red Onion
  12. 1/3 cup chopped Celery
  13. Chopped Dill & Parsley (to taste)
  14. 1 small minced shallot
Instructions
  1. 1. Pull chicken off rotisserie
  2. 2. Heat oven on medium broil
  3. 3. Chop/Mince grapes, red onion, celery, herbs, shallot
  4. 4. Broil almonds for 3 minutes (watch they will burn quick) Remove and put to the side
  5. 5. Add all ingredients in a bowl together and mix well
  6. 6. Taste and add anything additional or extra
  7. 7. Store in fridge in air tight container for up to 7 days
Notes
  1. *Can always use less mayo
